Cheesy Baked Chicken Tenders Over Spinach

What follows is an easy recipe for making one of my favorite quick and delicious chicken tender meals. It takes about 35 minutes to prep and cook.

Makes 4 servings.

Ingredients

  • 1 package of organic (ideally pasture-raised) chicken breast tenders

  • 2 cups of organic spinach

  • Pure olive or avocado oil

  • 1/3 cup of creamy Harvarti (though you might also use mozzarella or provolone)

  • 1/4 cup organic heavy cream milk (or organic butter)

  • Spices (including salt and pepper, organic poultry seasoning, organic garlic flakes)

  • Parsley flakes for decoration

Directions

  1. Preheat over to 350 degrees.

  2. Place tenders on a cookie sheet lined with parchment paper.

  3. Lightly coat with oil, add seasoning, and place in the oven for 30 minutes.

  4. About 10 minutes before tenders are cooked, place cream and cheese in small saucepan and slowly heat/melt on low temperature; add parsley and spices to taste.

  5. About 5 minutes before the tenders are cooked, saute spinach in a frying pan coated lightly with oil on medium heat, constantly pushing spinach around.

  6. Place spinach on each plate, add several cooked chicken tenders, and spoon on the cheese sauce.
