Hearty and Healthy (and Keto) Crockpot Beef Stoup

What follows is a very easy crockpot recipe for a healthy, hearty, and keto-friendly beef soup... or stoup.
Makes 4 servings, but consider doubling the recipe so that you have leftovers!
Prep time is about 15 minutes; crockpot time is about 9 hours on low or 5 hours on high.
Ingredients
2-3 pounds of grassfed beef (cubes or cut up into bite-sized pieces)
4 tablespoons of organic/grassfed butter
1 large onion
4 cloves of garlic, minced
2 cups carrots (sliced, diced)
1/2 cup of finely diced celery stalks
8 ounces of mushrooms, sliced/diced
2-3 cups of organic beef broth
1-2 cups of green beans or broccoli (chopped)
1-2 bay leaves
1/2 cup dry red wine (optional)
1 14-oz can of organic diced tomatoes
Salt and pepper to taste
Directions
Saute onions, garlic, and mushrooms in butter in a large skillet.
Remove those and place them aside, leaving the butter in skillet.
Sprinkle salt, and pepper on the beef pieces.
Brown beef on both sides in the same skillet, adding additional butter or olive oil. About 10 minutes or so.
Repeat for all beef pieces.
Throw beef and the remaining ingredients into your crockpot.
Depending on your schedule, cook on high (5 hours) or low (9 hours).
When ready, serve the beef stoup in a bowl.
