Nutritious and Mouthwatering Baked Sweet Potato Fries Recipe

Sweet potatoes are one of my favorite sources of fiber and nutrients, such as beta carotene, vitamin C, manganese, and potassium.
And these baked sweet potato fries make an excellent side dish – and a bit more playful than just a baked potato.
It takes about 10 minutes of prep time, up to 20 minutes for baking.
Makes 2 servings.
Ingredients
1 large organic sweet potato
2-3 tablespoons of arrowroot powder (such as Jiva Organics Organic Arrowroot Powder)
Avocado oil
Salt to taste
Directions
Preheat oven to 415 degrees.
Prepare a baking sheet by coating lightly with avocado oil.
Carefully slice the sweet potato twice. First, slice the potato into 1/8" slices. (We use a small meat/cheese slicer to slice the whole potato.) Then cut each slice into 1/4 “wedges.”
Place potato wedges in a bowl. Add a light coat of avocado oil and mix thoroughly.
Add arrowroot powder and mix again; your goal is a light coating of the arrowroot powder.
Season with salt to taste.
Place fry wedges on the baking sheet and cook 10 minutes on the bottom rack.
Move the sheet to the upper rack and cook for about 9 minutes, checking not to burn the fries.
Use a metal or wooden spatula to scrape fries off the baking sheet and transfer the fries to a serving plate.
Optional: You can also throw in some of your favorite spices, perhaps some hot pepper for spicier fries.
